Directions
Preparation
Pat ribs dry with a paper towel and remove the membrane.
Coat the ribs with mustard and season generously on all sides.
Let the ribs rest at room temperature while the smoker preheats.
Line the smoker drip tray with fresh aluminum.
Smoking Procedure
Preheat the smoker to 180°F on Smoke mode with dampers closed.
Arrange ribs bone side down on racks and place them in the smoker.
Once smoker has preheated, fill a pan ¾ full dampened sawdust, shape into a funnel, and place on the smoke burner. Set both dampers to 2/3 closed.
Smoke the ribs for 2 hours at 180°F.
After 2 hours, remove the sawdust pan and increase smoker temperature to 250°F with both dampers 1/8 open.
Cook ribs for 3-5 hours at 250°F until tender (internal temperature of 195°F-205°F).
Once the ribs are tender, lightly baste ribs with PS Seasoning’s Cherry Bomb BBQ Sauce and return to the smoke for 20 minutes.
After 20 minutes, remove ribs, let rest for 10 minutes, and serve.
Pro Tip: Spritz ribs with apple cider vinegar every hour to maintain moisture.
