Do I need to Preseason My Smoker?
Yes, before using your smoker for the first time, we recommend the following procedure:
- Set controller to Smoke and set to 100 Degrees Fahrenheit
- Fill sawdust pan about 3/4 full with sawdust.
- Moisten sawdust and funnel the sawdust to the outside of the pan(about 6 cups of sawdust and 4 cups of water).
- Increase temperature to 150 degrees Fahrenheit
- Open damper half way during the break-in period
- After 3 hours, turn the temperature control off
- Once smoker has cooled completely, the smokehouse is now ready for use
Can I Use It Indoors?
Yes, this smokehouse can be vented and used indoors with appropriate ventilation. Please contact info@pro-smoker.com to learn more about how to extend your exhaust for indoor use.
Can I Use Pellets?
Do NOT use wood pellets. Using wood pellets will cause your smoker to catch fire or spontaneously combust, potentially resulting in personal or property damages. Only fine sawdust or fine woodchips may be used in your Pro Classic. Using pellets will automatically void your warranty.
Can I use Wood Chips?
We recommend using fine wood chips or sawdust in your Pro Classic. If using wood chips, fill pan 3/4 full with chips, then cover pan with heavy duty aluminum foil and seal the edges. Poke several holes in the foil to allow airflow. Place pan on the heating element to start smoke.
Can I Use Any Sawdust?
We recommend only using Food-Grade Sawdust specifically made for smoking in our units. Sawdust can be purchased on our website or at a Cabela's near you.
Why Does My Smoker Keep Tripping the GFCI?
You may have insufficient power in your outlet. We recommend using a short, heavy-duty extension cord (if necessary) and using a grounded 20AMP outlet.
My Gasket Is Sticking to the Cabinet
We recommend spraying your smoker gasket with non-stick cooking spray, canola oil or mineral oil before every use. Let smoker cool completely with door open after every use.
How Do I Clean My Smoker?
- After each use allow the smoker to cool completely before cleaning
- Do not clean interior walls completely - only remove loose debris. The smoke film on the walls will improve the product flavor and will not affect the performance of the smoker
- Remove the shelves/sticks and the drip pan and clean with hot, soapy water
- Use soap-filled steel wool pads to remove baked on grease and stains
- Rinse, dry and store shelves and pan inside the smoker
- DO NOT use excessive amounts of water in the interior of the smoker. If water is used, dry out the interior thoroughly before operating
What is the Warranty?
● The performance, workmanship and materials in the cabinet are unconditionally guaranteed for
one (1) year when used for the purpose and under the conditions for which designed.
● The manufacturer will replace any part found to be defective (upon examination by manufacturer)
at no charge when such part is returned to manufacturer with transportation prepaid.
● All electrical parts are guaranteed for ninety (90) days.
● All warranties are void if smoker or parts are damaged by accident or misuse.
● The description and specifications contained in this literature were in effect at the time it
was approved for printing.
● The company reserves the right to change specifications or designs without notice and
without incurring obligations.

Is there assembly required?
Some assembly is required and additional power tools may be needed. The Pro Max includes a rolling caster base that will require assembly, as well as installation of the handles.

Pro Smoker App & Controller
What is the Difference Between Smoke & cook Mode?
The Pro Series Smokehouses come with two processing settings:
Smoke - Temp Range 80° - 180° F - 725 Watts
This is the recommended setting when using a sawdust pan for smoke production. A lower wattage output from the burner reduces the chance for burning sawdust and produces a more controlled stable smoke cycle.
Cook - Temp Range 80° - 300° F - 1450 Watts
This is the recommended setting for cooking product above 180°F. It can also be used to hold lower temps without a sawdust pan and may come in handy when smoking in colder climates as the higher wattage burner setting will produce more radiant heat within the smoker. We do not recommend using the sawdust pan on this setting, especially for prolonged periods.

Can I Use Multiple Probes in My Smoker?
Yes, the Pro Series controller can accommodate up to 3 temperature probes. Additional probes may be purchased here.
