Ingredients
- 2 – Whole Fryer Chickens
- 1 Cup – Cock-A-Doodle Brew Beer Can Chicken Rub
Directions
- Preheat smoker to 180 degrees on the smoke setting.
- Remove the chickens from their packaging and rinse them if needed. Pat dry with paper towel.
- Season the chickens generously on all sides with Cock-A-Doole Brew rub.
- Dress the chicken by tucking the wings under the back and trussing the legs.
- Fill a pan ½ full with sawdust and dampen with water.
- Place the sawdust pan on the heating element. Set dampers to 2/3 closed.
- Once the smokehouse comes back to 180 degrees, place the chickens in the smoker.
- Smoke for 1 hour.
- Carefully remove the sawdust pan and extinguish the embers with water if needed.
- Change the smoker setting to cook and increase the temperature to 300 degrees. Set dampers fully closed.
- Roast the chickens for 2-3 hours until the internal temperature reaches 170 degrees.
- Remove from the smoker and rest for 10 minutes before carving.
